Hello! Easter is coming soon and I'm really in the mood. I love spring – the weather is finally getting better again and everything is starting to bloom. One of the things I love most about Easter is Easter breakfast. The whole family sits together, eats and talks and also has delicious food.

So, what can't be missing from Easter brunch?

When I thought about what exactly these tips should be, the first thing that came to mind was eggs. Eggs are a must at Easter.

Secondly, of course, a drink, which shouldn't be missed early in the morning. Personally, I love drinking tea - morning, lunch, afternoon, evening - no matter when. And since it's slowly getting warmer outside and the drink has to be really refreshing for a spring-like Easter brunch, I created my own iced tea recipe .

Now for the third thing: a sweet pastry. Preferably one that has something to do with Easter. Easter – Easter bunny – carrots – carrot cake breakfast muffins, that describes my thought process quite well. And I have developed a super delicious recipe for that too.

But enough with the rambling, now the recipes!

Homemade iced tea

Ingredients | For two glasses of iced tea | Preparation time: 10 minutes

  • 1 bag of black tea (English Breakfast)
  • 500ml water
  • 2 tbsp brown sugar
  • 1/2 lemon

Preparation

  1. Pour a little boiling water into the tea bag and let it steep for a long time.
  2. Remove the tea bag from the cup and fill the tea in a measuring cup with cold water up to the 500ml mark.
  3. Add 2 tablespoons of brown sugar and the juice of half a lemon and stir well so that the sugar dissolves.

The iced tea is ready and the best thing about it: you know exactly what's in it and, it even tastes better than the one from the supermarket.

Carrot Cake Muffins

Preparation time: 15 minutes | Baking time: 15 minutes

Ingredients for 10-12 carrot cake muffins

Preparation

  1. Grate the carrot.
  2. Preheat the oven to 200 degrees Celsius (fan oven). Mash the bananas and put them in a bowl with the carrot, oat flakes, milk, maple syrup and eggs.
  3. Chop the pecans/pistachios and briefly toast them over the stove. Then add it to the bowl too.
  4. Mix everything well and pour the dough into 10-12 muffin tins (it's best to use a muffin tin so that everything keeps its shape).
  5. Bake the muffins for 15 minutes.
