Foodie @michelliiiiii created this fabulous recipe for us. Overnight oats with coconut and linseed provide you with plenty of protein and fiber for a great start to the day!
Michelle's message to you: "This recipe is perfect for summer because it is refreshing and the coconut flavor immediately reminds you of vacation. Overnight oats also save you a lot of time in the morning and still provide a delicious and filling breakfast. So what could be better? Have fun making it!"
The recipe
For 2 glasses of overnight oats
Time: about 5 minutes preparation time + at least 6 hours soaking
You need:
- 90g 3Bears Fruity Coconut
- 100g (vegan) quark
- 200-300ml plant-based milk
- 1 heaped tablespoon of flaxseed
- 1 tbsp coconut blossom syrup
- 1 tbsp coconut butter
- 1 tbsp coconut flakes
Here's how:
- First, stir the quark with about 150ml of milk until smooth, creating a creamy but slightly liquid consistency.
- Then add the remaining ingredients and mix them with enough milk until a creamy mixture is formed again.
- Then put the oatmeal mixture in the fridge overnight. As the oatmeal and linseed swell, the mixture becomes firmer. The next morning, you can add as much milk as you need until you have the consistency you prefer.
- At the end, divide the mixture into two glasses . Then you can top the overnight oats with granola, fresh fruit (e.g. goji berries, currants, apples) and quark.
- Best enjoyed in the sun!
