Vegan Cinnamon Apple Pancakes with Fruity Plum Compote

When it starts to get colder and your home invites you to spend more and more warm, cozy tea hours, then it's time for a wonderful, warm breakfast. Between autumnal apples and Christmas cinnamon, these pancakes from @anna.culina will find the perfect place on your breakfast table in the run-up to Christmas.

Ingredients for approx. 16 pancakes

  • 60g 3Bears Porridge Cinnamon Apple

  • 1 teaspoon baking powder

  • 1 pinch of salt

  • 200ml almond milk

  • 1 small ripe banana

  • 1 teaspoon apple cider vinegar

  • Coconut oil

For 1 glass of plum compote

  • 4 plums (400g)

  • 240ml water

  • 100g brown sugar

  • 1/4 teaspoon cardamom

  • 1/2 teaspoon cinnamon

Preparation

  1. For the plum compote, pit and quarter the plums
  2. Bring the water to the boil in a small saucepan, then stir in the sugar until completely dissolved
  3. Add the plums with the spices to the pot and simmer with the pot closed for 10 - 15 minutes
  4. Remove the plums from the pot and place them in a large mason jar. Continue cooking the liquid uncovered to thicken and then pour over the plums
  5. For the pancakes, mix the dry ingredients together and then stir in the liquid ingredients. Let the dough rest for about 20 minutes
  6. Heat some coconut oil in a large pan. For one mini pancake, add a heaping tablespoon of batter to the pan. Cook over medium heat until golden brown on both sides
  7. Enjoy the pancakes together with the plum compote in a cozy place.

Tip 1: The recipe makes more plum compote than needed, but it also tastes fantastic with porridge or desserts.
